Stovetop Moka Pot

Water in the bottom chamber heats until steam pressure pushes it up through the basket of grounds and into the top, where dark, concentrated coffee collects with a sputtering sound that tells you it is done. The six-cup size makes about three small servings, which you can drink straight or stretch with hot water or milk.

Fill the base to just below the valve, use a fine grind that is a bit coarser than espresso, and do not tamp. Brew over medium-low heat and take the pot off the flame when it starts to gurgle. Rinse with water only; soap strips the coffee residue that improves flavor.
