Cardamom Mango Lassi
Ripe mango pulp and tangy whole-milk yogurt whirl together into a thick, golden drink scented with freshly ground cardamom. A pinch of salt sharpens the fruit, and serving it very cold makes it a soothing partner for a fiery curry or a hot afternoon.

Crack the cardamom pods, tip the black seeds into a mortar, and grind them with the sugar until the mixture is fine and very fragrant.

Add the mango, yogurt, milk, cardamom sugar, salt, and ice cubes to a blender.

Blend on high for 45 seconds until the lassi is completely smooth and frothy on top.

Taste, adding more sugar if your mango is not fully ripe, then pour into tall glasses and scatter a few chopped pistachios over each.

Canned sweetened mango pulp is often more consistent than off-season fresh mangoes; if you use it, cut the added sugar in half before tasting.
