The coating is a sand-derived ceramic applied over a heavy aluminum body, and it is made without PTFE or PFOA. Omelets glide, crepes flip, and delicate fillets release with barely a nudge. The stainless handle is angled slightly upward, which makes shaking the pan and sliding food onto a plate feel natural.
Ceramic surfaces last longest at low to medium heat with a little butter or oil, so save your hard searing for cast iron. Let the pan cool before it meets water, wash it by hand with a soft sponge, and store it with a cloth or pan protector if it lives in a stack.
