Three slices of lightly toasted bread stack roast turkey, crisp oven-baked bacon, ripe tomato, and cold lettuce into two tidy stories, glued together with a peppery lemon mayonnaise. Cut into quarters and pinned with toothpicks, it stands tall and holds together until the last triangle.

Method

  1. Heat the oven to 400F, lay the bacon on a foil-lined sheet pan, and bake 16 to 20 minutes until crisp and flat, then drain on paper towels.

  2. Stir the mayonnaise with the lemon juice and black pepper.

  3. Toast the bread until light golden and still slightly soft in the center, then spread mayonnaise on one side of each slice, and on both sides of the two middle slices.

  4. On the first slice, layer turkey, lettuce, and tomato seasoned with flaky salt, then top with a middle slice.

  5. Add the ham if using, the bacon, a little more lettuce and turkey, then cap with the final slice mayonnaise-side down.

  6. Press gently, spear with four toothpicks in a square pattern, and cut diagonally both ways with a serrated knife into four triangles.
