Method

  1. Mash 1 banana in a medium saucepan until almost smooth, then add the oats, milk, water, salt, and cinnamon.

  2. Bring to a gentle simmer over medium heat, then lower the heat and cook for 8 to 10 minutes, stirring frequently, until the oats are tender and the porridge is thick and creamy.

  3. While the oats cook, slice the second banana into thick coins. Melt the butter in a small skillet over medium heat, sprinkle in the brown sugar, and add the banana in a single layer.

  4. Sear the banana for about 1 minute per side, until the edges caramelize and the sugar bubbles into a light syrup.

  5. Spoon the porridge into bowls, loosening with a splash of milk if it has set, and top with the caramelized banana, its pan syrup, and walnuts.
