Method

  1. Drop the mint leaves and sugar into a sturdy highball glass and press them gently with a muddler 4 or 5 times, just until the mint smells strongly aromatic.

  2. Add the lime wedges and muddle again to release the juice, twisting slightly to extract the oils from the peel.

  3. Pour in the rum, fill the glass three quarters full with crushed ice, and stir from the bottom up with a bar spoon to lift the mint through the drink.

  4. Top with club soda, add a little more ice if needed, and slap the mint sprig against your palm before tucking it in beside a straw.
